Spinach Chickpea-Rice Bowl

INGREDIENTS:

1 cup Organic Chickpeas, soaked overnight1 sweet potato, 1 cup long-grain brown rice5 cups tightly packed fresh spinach1 tsp garlic powder½ tsp cayenne pepper, ½ tsp cinnamon2 cloves garlic2 tsp olive oil, 2 tbsp tahinilime juice, salt, pepper

INSTRUCTIONS:

Start by cooking brown rice. Add rice and 2 cups of water to a pot, cook for 30 min or until soft. Add salt.Preheat oven to 180°C/350°F.Mix drained chickpeas with 1 tsp of oil, garlic powder, cayenne, salt, and pepper. Arrange chickpeas on one side of the baking tray in a single layer.Cut sweet potatoes into bite-sized pieces and place on baking tray too. Sprinkle with cinnamon and chili. Bake chickpeas and sweet potato for 25-30 min.Heat up 1 tsp of olive oil in a large pan, add crushed garlic and sauté for 2 min. Add spinach and cook for 3-5 min.For the tahini dressing mix together tahini, lime juice with a little water.Add rice, sweet potatoes, chickpeas, and spinach to a big bowl and top with the sauce. Enjoy!

Turmeric Noodle Soup with Peas

INGREDIENTS:

4 cups veggie broth2 oz noodles3-4 cloves garlic1 to 1 1/2 in fresh ginger2 tsp turmeric powder (more to taste)1 1/3 cups Organic Dried Green Peas1 cup broccoli1 cup fresh baby spinachSalt and pepper to tasteOptional additions: kale, green beans, green onion, etc.

INSTRUCTIONS:

In a large saucepan over high heat, pour vegetable broth and bring to a boil.Meanwhile, mince garlic and grate ginger.When broth is boiling, add garlic, ginger, turmeric, peas, broccoli, and noodles. Add salt and pepper to taste.Return to a light boil, then reduce heat and simmer for about 10 minutes.Stir in spinach during last minute of cooking.

Veggie Bowl with Lentils and Thai Peanut Dressing

INGREDIENTS:

1 cup Organic Green Lentils, dry3 tbsp olive oil2 carrots, 1 small butternut squash2 cups Brussel sprouts, 10 cremini mushrooms1/4 tsp sea salt fineblack pepper ground1/2 cup almonds

1/4 cup peanut butter1 tbsp soy sauce, 2 tsp honey1/2 tsp ginger powder2 tsp apple cider vinegar2-4 tbsp warm water

INSTRUCTIONS:

Preheat oven to 350 °F. Prep veggies by halving, peeling, and cutting.Combine all veggies, drizzle with olive oil, add salt and pepper. Toss until evenly coated.Cook until veggies are tender and golden on edges, about 35 min.To cook lentils – rinse first. Put in a saucepan and add 2 cups of water.Bring it to boil and then turn down heat and let simmer for 25 mins or until all of the water is gone.For dressing: blend all ingredients together, or place in a mason jar and shake well.After 40 min, veggies should be golden on the outside and tender on inside.Distribute the lentils into 4 bowls. Top with baked veggies, dressing, and almonds.
